TURTLE SOUP—Will someone having had experience give their method of making turtle soup?
As for dressing them, the first thing is to kill them, which I do by cutting their heads off with a sharp hatchet, or if it is hard to get them to stick their beads out, I shoot them with a revolver, then the head can be pulled out with a pair of pinchers. The next thing is to cut the shell along the sides with a blunt chisel, as it will injure a sharp one; then cut the skin and flesh close to the shell with a knife and the insides will be easy to remove. Skin the legs and tail as that is where the most meat is, let the meat stand in salt water overnight, or a day and a night won’t hurt. Then simply boil in water until cooked, adding a little salt and pepper and a few vegetables, according to the kind you like best; I generally use potatoes, green peas, and a little celery and sometimes onions and there is never any soup to throw out after supper.
