SKINNING AND DRESSING RABBIT—What is the best way to skin and dress a rabbit so as not to get the fur on the meat?
My method of dressing a rabbit is as follows: Hang up by hind legs and rip skin hack towards head, rolling it down wrong side-out over the body and fore legs. I then cut off the fore legs at second joint and sever head. Then I cut off hind feet, leaving carcass skinned. I then sever fore and hind legs close to body and cutting down along either side I am able to take away the belly and viscera, leaving for meat the back, fore and hind legs. I have trouble keeping fur off the meat while skinning and hope someone can show or tell me a better way.
