Salmon Canned-How are salmon cooked and prepared before canning?
The only cooking canned salmon receives is what it gets during the process of canning. The proper quantity of raw fish is placed in the can, the lid soldered on, with a pin hole left in the middle. The cans are then placed in a solution of chloride of calcium boiling at 260 degrees to 270 degrees Fahr. This caused gas to form in the cans which forces out the air, the object desired. A drop of solder is then placed in the pin hole. The juice is the fish is usually all the liquid required to cook it. Any fish can be canned in this manner. Sardines are cooked in oil before tinning. The bones are generally softened by the use of chemicals. For home and camp use vinegar will do the trick. This recipe is quite good. Potted Fish-Clean fish and place in earthenware vessel, just covering with vinegar. For each six pounds of fish allow one tablespoonful of salt, one dozen each of cloves, allspice and pepper corns; cover tightly and bake five hours. The bones will be all dissolved when done.
