Mason jars are not a decided success for canning meats of any kind, but if you purchase the Economy Jar you receive a book of instructions telling how to can all kinds of meats and with very little practice will have no trouble in preserving the flesh of wild geese and ducks. Almost any dealer will furnish Economy Jars. The receipt is as follows: Cook the meat, flavor to suit, remove the bones, and put in any jar with air-tight covers; turn hot-melted lard or the pure oil or grease of the meat into the jars until all air spaces are filled, and the top of the meat thoroughly covered, then close the jars tight while hot.
