Protecting a Carbon Knife
If you have a carbon steel knife and you are worried about rust, then you can force a 'patina' on the blade using vinegar or even citrus fruits. Essentially this ages the blade and causes a thin layer to oxidize on the outside of the blade. Don't worry though, because this is the good kind of rust as opposed to red rust which causes degradation to the blade.
