As a professional Chef, I am very particular about the food I eat. For Mule Deer I recommend marinating the meat for at least 48 hours. I really like the flavor of Dynamite Merlot for marinating. It's not real fruity nor is it too woody. That wine with kosher salt, fresh cracked black pepper, smashed whole garlic cloves, and coarsely chopped leeks...mmmmmmmm...yummy!!!
