Ingredients/Prep
Fresh filets of catfish
rinse in colt water well & pat dry
dip in milk
roll in cracker crumbs
lightly salt & pepper to taste
Directions
Place a small amount of Olive Oil in Skillet
Fry a short time on each side until fish is just flaky
It is important to stay alert during the frying - It is easy to dry out the fish - Fish does not take long to cook through.
Serve w/your choice of greens or vegetables.
Catfish is one of the most if not the most mild tasting fish you will ever eat and if it does not have fine bones in it.
