Coot-What is a coot?
A coot is commonly called a mud hen or water chicken and resembles a chicken. The color is dark gray. The male bird has a black head and some white in the tail. If boiled in salt water with onions until tender, and then fried brown in butter, the coot is better to eat than most ducks. We have a heavy flight of them here every fall. They are easy to shoot. When feeding in the weeds you can walk to within a few yards of them.
