Crust: 1 Cups Graham Cracker Crumbs 4 Tbs. Melted Butter 2 Tbs. Sugar

Preheat oven to 350 degrees. Mix graham cracker crumbs and sugar together in small bowl. Pour melted butter onto mixture. Mix together until moist. Press into bottom and sides of 9 inch spring form pan. Bake for 6 to 8 minutes. Let cool completely.

Filling: 28 oz. of Neufchatel Cheese. (3 1/2 8oz bars) 1 1/2 cups Sugar 4 eggs 1/2 tsp vanilla 3 tsp Apple Cider 2 to 4 medium size apples (Champlain Valley Orchard Apples) Peeled, cored, diced, and lightly tossed with cinnamon & sugar.

Turn oven down to 300 degrees. Cream together cheese and sugar. Mix in 1 egg at a time. Stir in vanilla and cider. Add apple pieces. Pour into crust. Bake for 90 to 105 mins, or until center is firm. Let cool at least 4 hours. Remove from spring form pan.

Topping: 1 14 oz bag caramels 1/4 cup milk or half & half

Heat caramels and milk till melted. Pour over cooled cheesecake. Cut into 8 to 10 pieces and enjoy!
