Boiled Cake McLaughlin Hunting Cake

1 Hour 350 deg.

Mix in a 3-quart saucepan: 2 Cups Water 2 Cups Sugar 1 # Raisins 1 t Salt 2 t Ground Cinnamon 2 t Ground Clove ½ Cup Shortening

Boil 5 minutes. Let cool to room temperature.

Add: 1 15 oz can of Pumpkin 2 t Baking Soda (High Altitude 5-6,000 ft 1 1/4 t Baking Soda plus 2 1/2 T flour)

Then stir in: 3 Cups Flour 1 Cup Pecans (optional)

Mix well, pour into a well greased bunt pan or tube pan. Bake at 350 deg for 1 hour.

Note: Must be mixed by hand as the batter is VERY heavy. When the cake is done it is VERY heavy. I only bake this when we go hunting. It seems to keep forever and has not needed refrigeration that I know of. But then it doesn't seem to last long enough to find out.
