I archery hunt and I like to take a fresh baked loaf of Banana Bread with me opening day. TIP - try using 1/2 cup of applesauce per egg. This will moisten the banana bread. As long as you are using baking powder or soda in your recipe it will rise normally.
1/2 cup softened butter
1 cup brown sugar
3 eggs or (1/2 cup applesauce per egg)
1/4 cup suger (only if you're using applesauce)
1 tblsp Vanilla
* mix *
* blend the dry ingredients together then add to mix *
1/2 tsp salt
3 tsp Baking Powder
1/2 cup Oats (oatmeal)
2 cups flour
coat a 9X5 bread pan; bake 1 hour at 350
