Ok, this is really an easy and probably well-known tip...but here it is.

As soon as you butcher your wild game, deer, elk, moose, whatever....put it immediately in buttermilk and fresh rosemary. It does not matter if you want to make a roast, sausage, tenderloin, ground meat....it makes it super tender and takes out the wild gamey taste. DO NOT PUT GARLIC! it will sour and turn your meat very acidic. White wine is ok, cayenne pepper is good, and other fresh herbs are awesome too, but rosemary I find is the best.
